The pan should be a "springform" pan, which is a round pan with a hinge on one side. The hinge widens the pan a little and allows the sides to be removed. To prepare filling, use room-temperature cream cheese and beat with sugar into a frenzy. Add both extracts and beat well. Add egg and beat even better. Bake in a 350 degree oven for 25 minutes. To prepare topping, mix all topping ingredients well and pour onto cake (starting from the edges so that cake does not crack). Bake for another 8 minutes and cool well (at least 3 hours). -----
