---------- Recipe via UNREGISTERED Meal-Master (tm) v8.01 Title: Stir Fried Shrimp With Black Beans Categories: Seafood, Chinese, Main dish Yield: 4 servings 1 lb Shrimp, shelled 1/2 c Oil -------------------------------------1------------------------------------- 1/2 t Salt 1 T Cornstarch 1 T Cooking wine -------------------------------------2------------------------------------- 1/2 T Fermented black beans 1/2 t Chopped hot pepper 1 t Chopped garlic 12 ea Green onion, 1 in. -------------------------------------3------------------------------------- 1 1/2 T Water 2/3 t Cornstarch 1 T Soy sauce Make a cut at the back of each shrimp to butterfly them. Clean as wash the shrimp then pat dry. Add (1) to the shrimp; stir to mix. Add 1 T oil and mix well before frying so that the shrimp will seperate easily during frying. Mix (3) in a bowl at this point. Heat the wok then add the oil. Stir fry the shrimp until cooked (precooking); remove from wok. Remove the oil. Reheat the wok and add 1 T oil. Stir fry (2) until fragrant. Add the shrimp and (3); stir quickly over high heat until mixed well. Place in medium bowl and serve. NOTE: Fermented black beans are black beans that have been steamed, fermented and marinated in salty water then allowed to dry. It is better to rinse black beans before using. This removes some of the salt residue. -----
