---------- Recipe via UNREGISTERED Meal-Master (tm) v8.01 Title: Mo's Chowder Categories: Soups, Seafood Yield: 4 servings 6 ea Slices bacon 1 t Black pepper (coarse) 1/2 c Onion (coarsely chopped) 3 c Milk 2 c Clam broth 1 c Evaporated milk 3 c Medium potatoes (peel/diced) 1 1/2 c Chopped clams 1 x Dash Tobasco 1 x Salt (to taste) Fry bacon over medium heat in large saucepan until crisp. Remove to paper towel and reserve. When cool enough to handle, break into bite-size pieces. Pour off all but 2 T of the bacon fat from the saucepan. Saute onion in fat until transparent. Stir in clam broth. Add potatoes. Bring to low rolling boil and cook until potatoes are fork-tender and ready to fall apart on their own, about 10 min. Add Tobasco and pepper. Heat evaporated milk and milk. Add to potatoes, along with clams. When clams are warm (only a few minutes), add salt to taste. Use reserved bacon to garnish. -----
